Katie specialises in making raw, organic chocolate which is also dairy free and gluten free. Most of her chocolate is also suitable for diabetics. She also makes raw deserts and energy balls. She does a small amount of organic pastry too - usually mince pies for Christmas

Tell us about your path to setting up your business and what motivated you?

I’ve always loved to cook from scratch and when my children were born I became more interested in how the food was grown. I tried to eat as organically as possible to avoid chemicals used in farming. I have a large veggie plot of my own. One of my concerns were healthy treats for my two daughters, I wanted to avoid sugar where possible. So, when raw chocolate appeared on the scene I gave it a go trying numerous recipes found on the internet. None worked! It took me two years to be happy with the chocolate - taste and snap!

How do you work and what is a typical day like for you?

After walking the dog it's home to prepare at least one batch of chocolate before pottering in the garden and greenhouse. Making raw chocolate takes time and patience so I can't have any distractions. To ensure it is raw, the chocolate needs to be melted slowly and at a low temperature, it then needs tempering. I love to experiment with flavours, toppings and fillings.

W​hat are the best parts about your business?

I love it when a customer will say 'I can't eat chocolate, I'm vegan, or I'm dairy intolerant or I'm diabetic' and the joy on their faces when they try it and realise it tastes amazing!

W​hat has been your greatest struggle as a business owner so far?

I’ve has struggled with the amount of products I offered. Initially baking sour dough bread several times a week alongside the chocolate making. This was taking up too much of my time and orders were increasing. So, I recently stopped this side of the business to focus on the raw chocolate.

What has been your biggest a-ha moment so far?

Realising I can make white chocolate without dairy

D​o you have any advice for other small business owners?

Setting up my business was so much easier than I had imagined. The registration of a business name is simple and everything else then falls into place. I had been told by a friend in marketing that new businesses can take up to five years to really establish themselves and start to turn a profit, this was good advice. I am so glad I made the decision to start my own business. I love it!

What currently inspires you?

Customers comments inspire me, often they are grateful as they haven't found a nice dairy free chocolate before.
